Easy instant pot vegan curry is a simple vegan-vegetarian recipe. All you need is 5 minutes and vegetables of your choice, chopped in the same size. In this recipe, I used green pepper, carrot, and potato.
Last week during lunchtime I was running out of ideas on what to cook as a curry to serve side dish for lunch. I have a partition steamer from the food network bought from kohls a few months back.I just realized why not try to steam leftover vegetables make a curry in instant pot and to my surprise everything cooked the same to perfection nothing went overcooked or undercooked. Turn on the instant pot and add a cup of water in the inner pot.Chop the vegetables with same size.Place the trivet and the steamer basket with the vegetables.Set ‘Steam’ mode 4- 5 minutes .Depends on the quantity of the vegetable.Once done do a QR.Take a pan and add oil ,wait for a minute .Add mustard seeds at this stage and wait for this to splutter.Add the streamed veggies and saute for 2 minutes .Add salt,curry powder,chilli powder and mix it well.Your instant pot curry is ready to serve.Enjoy with rice or stuff it inside tortilla or make wrap with roti and enjoy.
