Today I decided to make this veg fried rice in instant pot. All you need 3 minutes to make one cup of rice. I have doubled the quantity and made 2 cups of rice. The flavor from burnt garlic gives an extra punch to the recipe. After the arrival of an instant pot, my weekend meal is a simple one-pot meal Since we will be busy with shopping and other things.
Once you try this Indian vegetable fried rice instant pot you will not go again to a restaurant. I ran out of carrot so I substituted with colorful bell peppers. Now let’s get into detail to see how to make this fried rice instant pot Indian recipe in 3 minutes
Rinse the basmati rice in running water once and soak it in water for 10 minutes.
After 10 minutes drain the water completely. In instant pot turn on ‘saute’ once it shows hot, add the sesame oil, add garlic and fry till it turns into medium brown color.
Add green chili, spring onion bulb, vegetables and saute for a minute. Add vinegar, soya sauce, rice, salt, and water. Mix it well and set manual/pressure cook for 6 minutes.
Do a QR(quick release) after 2 minutes. Add the stems of spring onion and serve with onion raita or your favorite Manchurian. For an exact measurement, read below instructions:

Instant pot fried rice is one of the easiest recipe i love to make atleast once a month.
- 2 tbsp sesame oil
- 3 numbers garlic pods finely chopped
- 1 bunch spring onion finely chopped
- 2 numbers green beans finely chopped
- 1/4 cup carrot finely chopped
- 1/4 cup green/yellow/red pepper(Optional) finely chopped
- salt to taste
- 2 tsp soya sauce (light)
- 2 tsp vinegar
- 2 numbers green chilli reduce to 1 if you dont want it to be too spicy
- 2 cups basmati rice
- 3 cups water
- 1/4 tsp sugar
