My grandmom used to make these milk barfi sweet for hours and hours of stirring with so much love and patience during the Diwali festival. After my grandmom passed I tasted the same recipe from my mother in law after my marriage.
When my mother in law wants to send some sweets from India I always ask her signature milk burfi. Last time during her visit I learned the art of making this burfi sweet in stovetop. Now with instant pot, I want to make an easier version.
Some people use milk powder, condensed milk to make this barfi recipe but nothing tastes like the traditional milk cake recipe.
Milk barfi recipe
Milk barfi /kalakand in instant pot is easy to make with less intervention
- 4 cup milk
- 3/4 cup sugar adjust according to your taste
- 6 tsp ghee /clarified butter
Turn on the instant pot to saute mode with normal temperature.
Once it displays hot add 2 tsp of ghee,milk and sugar.Mix it well.
Let the mix keep boiling .Stir it once in a while
Once the milk mix starts to become light brown color, reduce the temperature from normal to low,add rest of the ghee little by little keep stirring .This is when you need to be closer and stir it continuously with close montioring.
Keep stirring until the mixture leave sides.
Grease a tray with ghee and pour the mix immediately.After few minutes cut into squares and enjoy.
Please use crystal sugar i have linked in the post. The powdered sugar doesnt go well.
After pouring into tray if you find the kalakand sticky pour the same into the instant pot and stir it for another 5 – 7 minutes.You will get the right texture.
