Its October ,season of pumpkins.While shopping in whole foods last weekend all that caught my eye was “Pumpkin pasta sauce with cardamom” . I immediately grabbed couple of pumpkin puree cans and wanted to try this pumpkin sauce pumpkin sauce penne pasta instant pot
This recipe is a vegan version ,if you decide to add cheese ,milk go ahead and play with your own choice.The pasta i used is penne in this recipe.I didn’t add spice in the beginning since i make it for my toddler as well.

pumpkin sauce pasta vegan - instant pot
Saute - Onion ,garlic ,pmpkin puree
Manual - 5 Mins - QR
- 1 tbsp olive oil
- 2 nos shallots sliced thin
- 4 nos garlic finely chopped
- 1 cup pumpkin puree
- salt to taste
- 2 tsp italian seasoning
- chilli flakes optional
- cheese optional
- 2 cups pasta penne
- 1 cup water (or)water completely to cover the pasta
Turn on the 'saute' mode in instant pot.Once it displays 'hot' ,add the oil.Make sure the oil is spread across the pot .This will avoid burnt pasta.
Add the shallots and saute for a minute and add the garlic ,water,pumpkin puree,salt ,italian seasoning and then the pasta and mix it well.
Close the lid and set the function to 'manual' 5 mins
Make sure the vent in 'sealing' position
Quick Release after 5 mins .You pasta is ready to serve.
To avoid half cooked pasta it is always better to soak in hot water for 1/2 an hour prior to cooking
